Boil your water, generously salt it, and choose a pasta that feels like a little reward, rigatoni, bucatini, or something with ridges that catches sauce. In a pan, slowly warm a good splash of olive oil with a clove or two of garlic, letting it turn golden without burning. Add a pinch of chili flakes, a twist of black pepper, and a handful of cherry tomatoes or a spoon of tomato paste. Let it all soften together, unhurried, maybe a little music in the background, the day finally starting to exhale.
When the pasta is done, move it straight from the pot to the pan, letting a little of that starchy water follow. Add butter, good butter, salted butter, and stir until it becomes silky and glossy. Finish with parmesan, more black pepper, and a drizzle of oil so good it almost feels wasteful.
