You’ll need:

  • Good sourdough, toasted
  • ½ cup ricotta (thick, creamy, preferably whole milk)
  • Zest of ½ lemon
  • A drizzle of honey
  • A few thyme leaves (fresh)
  • A pinch of sea salt

To make:

  1. In a small bowl, mix the ricotta with lemon zest and a touch of salt.
  2. Spread generously on the warm toast, it should melt slightly at the edges.
  3. Drizzle with honey and scatter the thyme leaves on top.
